Try to see as much of the country as you can. The south is very different from the north and it is well worth extending your holiday to try and see the Omo valley if you can. The accommodation is much better than we were led to believe and the food was excellent. but perhaps that was because we booked with Eskinder Hailu who made sure we had good accommodation wherever we stayed (even where it was fairly basic)..
